How much non reading gameplay/gameplay based progression do you think separates a visual novel as a different type of game entirely?

It depends. There are hybrid visual novels and then there are games with visual novel elements (Persona, Fire Emblem: 3H). I'd say if the non-reading gameplay outweighs the VN aspect, it's not a VN.
