Do like Octolings go into a huge project the eggs from anyone near them?

I'm guessing you mean do they try and like protect eggs from people around them? And the answer is yes. Specifically if it is the parent (most likely the mother)
For example, if a mother or father was around their egg they'd be constantly watching it, not letting it out of their sight. But if it was like some random octoling watching some random egg that they had no relation to, sure they'd try to protect it cuz it's a BABY but they wouldn't be like tooth and nail nobody even get near it.

This headcanon of Octolings being super protective of their offspring/eggs I believe I found from someone on Twitter, but it's sorta based of the real octopuses where they will just straight up starve themselves trying to protect their eggs (or something like that I believe)
So yes. If not properly dealt with an octoling parent could possibly starve themselves trying to protect their eggs.
