RISC-V is all in all a much simpler isa. One can understand the basic integer 32bit or 64bit ISA in very little time. the fact that it is an open Isa with tons of amazing open source tooling is a great bonus. I can't wait to see it become a larger part of the world but it definitely will take time given that it is currently less performant by several measures.

Why do you prefer arch? I know everyone says "oh it gives me more control". But control over what? Is it really better to do every small thing manually?
I prefer arch because I prefer simplicity. I prefer an additive approach to setting up my system rather than a reductive one. If I start with a distro with many packages I don't need, I'd have trouble figuring out what to delete. Arch Linux comes with very little initially and I can always add packages as I please. Additionally, installing literally anything is so easy on arch; the AUR has the best selection of packages available anywhere. And finally, installing arch is far easier now with the arch cli installer that is included with all the arch ISOs now!
