It varies, but lately it's been a low-ish tempo or mid-tempo electric guitar in low tunings (drop A, drop B, etc.).

But in general, I enjoy listening to classical guitars, tagelharpa, harps, ouds. For listening to single instruments, I tend to enjoy the strings more. Traditional drums of all sorts can be good too.
