how do you rip the music from games?

Highly dependent on the console and game. Most of the time I get the original music audio file from the game and just use it, sometimes I make a SNES audio chip savestate (it can work independently) and attempt to play every song, or record the song in-game while suppressing sound effects. It can be a lot of things.
