Since magic exists in this world does that mean souls can be interacted with in a meaningful way? Could I take Nick’s soul and stuff it in a cookie jar?
Magic doesn't necessarily imply that, but certain magical paradigms would allow one to have such interactions, yes. The question then would be if you're interacting with a "real" soul or some kind of simulacrum generated by your magic, and that's a whole ass discussion that would be interesting if we had more main characters immersed in that side of the setting, but S-N's story focuses on other matters. Maybe someday, in one of the short stories, we'll tackle the issue in more detail.

What's the average power like? I think I remember a guy spitting fire, which doesn't seem as multifaceted as Mnesis's, Superfang, Unbound, or even Copycat's powers. Are the Sentinels just built different?
Overall, I've made an effort to have the powers be on a lower scale, simply because I knew I wouldn't have the budget to go crazy with visual effects and CGs to do justice to some of the more insane feats you'll see in other superhero media or anime. Think more the Netflix Marvel shows and less the proper MCU movies.
That being said, of course the main cast will have more interesting powers, while throwaway characters like the guy you mentioned would have more boring ones, since they don't really matter to the story and therefore won't be any source of excitement. Not to say that boring powers can't be used in exciting ways, but still.

I think we might see Nick in one.
As for what they'd enjoy:
Frank would plain not enjoy being asked anything, he's really not an interview kind of guy.
Vince would enjoy talking about anything that has to do with his superhero persona. Also his hobbies.
Tim would prefer to talk city politics.
Emma would enjoy answering questions about Sentinels in general.
Vince and Tim would not enjoy questions about their families.

Are there laws against technology like the laser guns? How does society seem to resemble a modern earth with all the superhero shenanigans and technology like what Baron in Black works with, or the casual use of an A.I. like GIL?

It's a fair question and I've been considering addressing it, maybe in Baron's route. Truth is, we've only seen unique cases. GIL isn't true AI anyway, just a very advanced Alexa lol, and the tech Tim uses is applied actively in his environmental efforts, but he'd never sell it as weapons or something. As for the laser guns, they're very much a novelty--what we see in Fang/Baron's routes is the first time out heroes have encountered them. As to where they come from... we'll have to wait and see.
Overall, there are some aspects where the world of Super-Nova is more advanced than hours, but it's not that relevant to our main story, so I'm reluctant to dedicate time to that in the narrative. Maybe if I get around to implementing some more Extras, we can learn more.

Griffith did nothing wrong and Serpico is best boy.
I read most of the manga and I quite liked it. Definitely one of the most memorable fantasy works out there. I do think the early parts have an tryhard edgelord quality to them that I don't appreciate (you can argue with me on this but note that Miura himself said in an interview that looking back, he wasn't so sure all that sexual assault should've been there). But overall it's really, really good.
