Assuming it's the same world where Toji died and Gojo found Megumi before the Zen'in did, and the only exception that Megumi didn't enlist in the Jujutsu high and went to normal school.
In short, I think for someone like Megumi who was born with a brilliant talent can never really live a normal life. Gojo training him and trying to make him stronger was like a tool that he can use to take care of himself and protect himself -even though that didn't seem to work well for the two of them. I think it's kind of doomed situation for the two of them.
Gege stated in the fanbook that Megumi never worked professionally as a sorcerer until he joined the high school. He only went to missions with Gojo -so I'm assuming Gojo took him to missions to train him and give him experience.
But even when he was in a normal school, Tsumiki still got cursed and many in their school got cursed too. Tsumiki was also targeted by Kenjaku at some point, so she was never safe even around Gojo and Megumi. It has nothing to do with Megumi becoming a sorcerer or not.
But let's assume that Tsumiki was safe and never cursed was Megumi going to be happy in life if things were normal? I don't think so. We can see in chapter 9 and chapter 59 how Megumi thinks of the world as bad people who do bad things and good people who enable them by forgiving them. I think we can say that it probably started with having "bad people" as caretakers, his father was deadbeat who literally forgot his son's name, and probably his step mom was lousy too, since young Megumi assumes that they runaway together and done taking care of them. So IMO Megumi's trauma started long before he even met Gojo. Probably when his mother died and Toji stopped caring. It always saddens me how sad 3 years old Megumi was in Toji's flashback. Psychology it's suggested that things like attachment issues and many issues develop in early childhood, a stage children won't even remember in their lives.
Now let's say that after Megumi grew up, he's not as angry as his mid school self, he studied in a normal high school and went to collage. How would his life turn out?
We actually have two examples of what Megumi's life could have been in the manga.
1) Nanami -which is closer to Megumi's case: Nanami went to juju high but chose to have a safe life after what he went through. At the end of the day, Nanami realized that the real world and the world of sorcery are equally unfair and unjust, there will always be "bad people" ruining everyone's life anywhere, so he chose what he can do best. He chose the part where he might not make some change but where he can be true to himself. (Interesting detail in the porotype draft of JJK is that Nanami was going to snap at work and kill everyone.)
2) Higuruma: the other example is Higuruma. He had a similar life to Nanami in the porotype manga, he worked a decent job until one day he snapped because he was done with how wrong this world was. the difference is that Higuruma never knew about Jujustu. Higuruma probably had similar vision to Megumi, he says something like "the eyes of the lady of justice's statue are closed, even if it was just me, I wanted to keep my eyes open". I think like Megumi, he wanted "good people" to receive more justice in a this world. He tried to help people with the tool he had: Law. Where we see Megumi says that Jujutsu us a tool of justice and to punish bad people.
But it was never good enough for Higuruma, he couldn't even change anything. So when he got his Jujutsu power he used it to follow his ideals and enforce what he thought was justice and punish bad people, even if he regretted killing people later.
tl;dr
What I'm trying to say is that In my opinion, even if Tsumiki was still alright and even if he had the choice to stay away from it for some time, just like Nanami and Higuruma, Megumi will most likely was going to turn around and get involved in the Jujutsu world -peacefully like Nanami or violently like Higuruma, simply because that's who he is as a person.
That said, in the canon verse, Shibuya would still happen. Gojo will still be sealed, Yuji might not have become a vessel for Sukuna in chapter 1, but he will become one in Shibuya after Kenjaku removes all the seals, and as we recently got to know, Yuji was born with a Sukuna's finger sealed inside of him.
The difference would be is that I think that Sukuna might not have killed all these people as Yuji, and he might not have possessed Megumi and kill Tsumiki and Gojo.
But then again, in this world if Megumi was raised by Gojo, I think he might still participate in the culling game to rescue Gojo. And who knows how things could have went, he might still get possessed since he might encounter others and Angel, and Angel who's looking for Sukuna.
At any rate, for all we know all of Japan is in danger from Kenjaku's plan. (Idk the plot has been all over the place recently I'm not sure about this?) So maybe by a miracle, Megumi and Tsumiki didn't get caught up in this mess and they might have evacuated to somewhere safer in Japan or outside Japan. I don't really know. ¯_(ツ)_/¯

What if Gojo never became a responsible person?
Alright, let us imagine Gojo as a sorcerer without a purpose -like the fandom wants him to be or what Nanami thought, I guess he can have fun fighting curses and sorcerers and then he can come home to his beloved girlfriend or sugar mommy. just like Toji, I know the fandom would love him for sure and will take no blame in what happened to Megumi. Maybe Gojo could have been happier.
Well have Megumi get back to the Zenin where Tsumiki can live a life worse than Mai.
Or in an orphanage where they might also get separated and adopted into different families.
Megumi will be fine, I mean what's the worst that can happen to him? emotionally hurt even more?
Let's have Yuta die too or spend the rest of his life in prison because Rika won't let him die.
Let Yuji who was born with a Sukuna finger turn into a vessel in Shibuya, after Kenjaku unseal all the items. I mean it's not like Gojo saved him. not that Megumi asked Gojo because he trusted Gojo will do that. no because apparently Gojo doesn't respect Megumi's choices, and takes away his agency.
Let Gojo get sealed in Shibuya because he has the six eyes, and no one cares about him to unseal him, not even the Gojos or the higher ups. I mean it's not like only his students stood up for him, and Megumi played the biggest part in that. Let him stay in the prison realm and let Kenjaku and Sukuna have fun in this world.
It is said that Kenjaku was manipulating the higher ups and Kamos after Shibuya, but if Gojo was still an irresponsible sorcerer who didn't care about the juju world and not an important figure like today, Kenjaku would have had fun doing what he wanted long time ago.
Who else actually tried to fix the juju world? who would have stepped up and tried to actually change the world for the better?

Sad Thoughts warning about Gojo and Megumi's relationship:
The lack of Gojo/Megumi content and interactions is hurting me physically. Not just in the manga -where I was waiting for Gojo to mention Megumi in any flashback in vain, but there was no mention of Gojo and Megumi's relationship in the exhibition or the Q&A. Even though, the last answer Gege answers the students and they put the panel from 79, and the last page in the ch 78 drafts was Gojo meeting Megumi.
Ch 78 was the crossroad in Gojo's life. Geto leaves and Gojo meets Megumi -you'd think it should be meaningful and holds more weight on the story but Gege doesn't explore their relationship. Meanwhile Gege keeps dragging his -mind you- toxic relationship with geto even though their relationship not only didn't work out and they drifted apart long before Geto leave, but it got a conclusion in jjk0. from before jjk even starts. More over, Gege himself said that Gojo moved on with his life after Geto left in 2 separate occasions. If Gege had the time to recycle this relationship, he should have more than enough time to focus on developing characters and relationships that need attention and development, Gege literally said he failed to explore Tsumiki and Hana's characters. He definitely failed to explore Megumi as a character as well as most of his relationships, but you'd think he won't mess the one with Gojo since Gojo is an important character unlike the girls.
I mean after 261, I thought I needed a reality check, (I guess 236 too), maybe I was wrong about the importance of their relationship, maybe they didn't have that much impact on each other's lives seeing as Gojo is emotionally distant and still stuck in the past, and perhaps that's why Gege doesn't really show us their relationship. Maybe my judgment was wrong. So recently I decided that I need to face reality and start letting go before I get hurt even more.
But suddenly Gege dropped these Q&A, and despite the fact that there was no mention of Megumi in any of them -which is hurtful, but the answers put more weight and depth on Gojo's relationship with Megumi, now it makes even less sense that it's not focused on. The fact that Gojo was distant from his parents from a young age and later left the clan, as well as the fact that he couldn't experience normal family relationship (or feel like a human), and then Gojo met Megumi -an orphan and an abandoned kid who will also might get treated like Gojo was treated -and not as a human being. Megumi already had no one but Tsumiki, when Gojo had other people around but it was as if he was alone.
I feel like all that logically should make their relationship more significant. It should be more than a simple teacher and student or a benefactor and someone who received the charity. Gojo definitely had an emotional investment in their relationship but Gege barely showed us that, he keeps telling us that Gojo felt lonely and isolated. Why did he reject his students in 261 when he was "I can count on everyone" the moment he was sealed? why would he say that you can't ask a flower to understand you when he kept saying that to Megumi subtly? "don't get left behind by me" "at this rate you won't reach my level" the talk about the clan head..
I mean I do think there's some emotional distance between Gojo and Megumi, not just from Megumi having attachment issues and lack of self wroth, but also because Gojo is emotionally distant too. But that's the thing that they need to realize and face, having been together should have meant something, and they need to convey that to each other and understand what they meant to the other. I feel like they have to meet again, because if Gojo died and will never come back, does that mean that all the years and the love they shared didn't reach the other? that it didn't save either of them? Did Gojo yet again reach someone who was right next to him? it made me even less acceptant of Gojo's death. Gojo needs to tell Megumi things himself.
Sometimes I wonder if Gege had his original perception of the characters but when he changed the story he didn't adapt the changes. I mean Gojo was always supposed to be a teacher with or without Megumi, Gojo was not supposed to know Megumi from childhood, but now that the plot has changed their relationship and the impacts it has on them should have changed -and if it did in Gege's mind, he failed to portray it in the manga.
Sometimes it feels like Gege writing all the sad stuff and skipping all the happy parts? Shouldn't be a balance between and the hurt and comfort? the pain and reward? This is fiction not real life, there should be a conclusion at least.
I feel like there might still be some hope, we can still get some conclusion to their relationship one way or the other, at the end of the day Gege said Gojo should be the one to tell Megumi about his father, and he mention "the possibility" of Megumi knowing about his father in the exhibition -although he didn't mention Gojo of course. but I don't know if I'm just clinging to false hope.
Again, perhaps my judgment was wrong from the start, but some things definitely don't make sense, and Gege definitely didn't do their relationship justice.
