Clootie Dumpling. It’s like a rich spiced fruitcake (in true Scottish tradition: full of fat), but instead of being baked in the oven the mixture is wrapped in a cloth and then boiled in water - for hours. Then you’re supposed to leave it under the bed for a few days before you eat it. (Don’t ask me, I’m just telling the story.) It’s a heavy lump of a thing - firm in texture with a smooth outer skin. You can slice it and eat it like cake, have it warm as a dessert with custard, or fry it and have it for breakfast with bacon and eggs etc.
