You can make your own broth and use "exotic seasonings," e.g. what they suggest in this article: https://www.bonappetit.com/story/best-instant-noodles - you can get your own Asian seasonings and modify it in various ways too. Like ginger, fenugreek, five-spice, etc.
I cook it on the stove top, add only half of the seasoning packet. I like fresh scallions, cilantro, sliced onion, and tofu in mine. Crispy fried garlic/shallots on top for garnish with a fresh crack of black pepper.
Basically just add whatever protein and veggies you like and make sure they're cooked if they need to be. I know a lot people like mushrooms in theirs. You could also add a poached egg on top
You simply cannot. Instant noodles never become "al dente".
