It's easy to say I wouldn't, but I have no idea what it's like to be in a situation where it's either starve to death or eat human flesh. The Russian famine of the 1920s is an example of how normal people will resort to cannibalism as a last resort. People selling human remains. Mothers having to feed their dead children to the ones who are still alive. There are some very upsetting and disturbing photos documenting it.
