You've got extraordinary culinary skills, so which is your signature dish? & Which are you hesitant to attempt again?
I don’t have a signature dish. What does my family love that I make? Pozole, birria, carne adobada, lasagna, pasta (w white sauce, grilled chicken, and asparagus), different stir fries, enchiladas, beef tongue, tacos dorados, sopes, caldo de albóndigas, mole.. Pretty much whatever I make they eat. They have a tendency to prefer a lot of the traditional Mexican meals. The thing that I’m lousy at is making flour tortillas. Something about the dough that doesn’t quite turn out right for me. I try, but then I scrap the dough and and turn it into gorditas de azucar. 😆

My signature dish is probably fried potatoes. Everybody loves my secret seasoning ... jk not a secret. Salt/pepper/onion & garlic powder/cayenne /paprika/chili/.
I am really bad at making cakes. But it doesn’t stop me from attempting them, because I love decorating. I made super cute cakes for my husband and babies bdays. They didn’t taste good, but they sure looked good.
Full grain couscous with brown sugar, syrup, raisins and pistachio dust. People try one spoonful of it and they say "This is heaven."
Crèpes. The perfect crèpe is as simple as it is tough to do right.
Lasagna is mine, you will eat it and fall to your knees weeping. Um, joyful tears
There's nothing I wouldn't try again, I'll swap out ingredients change techniques, whatever it takes, I am un artiste in the the kitchen and I will (eventually) make a masterpiece!
I have average culinary skills. My Italian grandma taught to make a great Chicken cutlet parm sandwich or over pasta🥲
